Meringue and Mice

Because we only have three ovens (ahem) to work with, I am going to have three groups make meringue. When we are done with the meringue we will make sugar mice out of egg whites and powdered sugar - pretty much the same ingredients we used for the meringue, just used in a different way.



What are some secrets to making meringue? There are a few!
Clean bowl, made of metal or glass.
Room temp eggs.
Don't rush the baking.
Crunch or softness of the meringue depends on sugar content.
